Golden choux pastries split and piped with vanilla custard, éclairs glossed with dark chocolate, and a tower of profiteroles held together with spun caramel. This mix takes the stovetop step out of choux pastry. Add eggs and water, beat for eight minutes and the mix is ready to pipe.
Pipe long fingers for coffee éclairs, small rounds for cream-filled profiteroles, or a ring for a Paris-Brest with praline cream. Stock a bag before the next high tea and fresh cream puffs can be cooling on the rack in under an hour.

Directions for Use
You'll need: 500g choux paste mix, 500g eggs (approx. 10 eggs), 375ml water.
- Preheat oven to 200°C.
- Place the eggs, then the water, then the mix into a mixing bowl.
- Beat on medium speed for 1 minute, then scrape down the bowl.
- Beat on top speed for 7 minutes.
- Pipe your shapes onto a lined baking tray.
- Bake. Times may vary depending on your oven.
- 200°C: 20 minutes
- Then reduce to 175°C: a further 10 to 15 minutes, until golden
- Allow to cool, then fill with custard, cream or ganache.
Storage: Store below 25°C in a cool, dry place, away from direct sunlight.
