Made from bovine gelatine and Halal, these Silver grade leaf sheets give a reliable set for kitchens that need a halal option. At around 170 bloom, Silver sits between the softer Titanium and the firmer Gold, so mousses and jellies set with a smooth, gentle hold that still slices neatly.

Use them for a glossy mirror glaze poured over a chilled entremet, or a clear strawberry jelly layered on top of a baked cheesecake. Each sheet weighs about 2.5g, slightly more than a standard 2g leaf, so weigh the gelatine rather than counting sheets when a recipe is written for a different brand.

Directions for Use

1. Soak the sheets in cold water for about 5 minutes until soft, then gently squeeze out the excess water.
2. For warm mixtures, stir the softened sheets in until fully dissolved. For cold mixtures, dissolve them in a little warm liquid first, then mix through.
3. Refrigerate until fully set.

Storage: Store in a cool, dry place away from direct sunlight, moisture and strong odours.
