Macaron Premium Mix 500g - Iconic Cake Art

Pastel macaron shells with smooth tops and ruffled feet, sandwiched with ganache and stacked on a high tea stand. This mix takes the measuring out of macarons. Add warm water and colouring, and the batter is ready to pipe in about six minutes.

Tint batches in wedding colours and box them as bridal favours, pipe mini shells to crown a drip cake, or fill them with lemon curd and raspberry buttercream for a high tea platter. Keep a bag in the pantry and a tray of macarons can be on the table the same afternoon.

Ingredients: Sugar, Almond meal (30%), Whipping agent (emulsifiers (472b, 477), glucose, milk solids), Egg Albumen Powder, Maize Starch, Emulsifier (472e, 481), Thickener (1414), Salt, Vegetable gum (415), Acidity regulator (330)

Directions for Use

You'll need: 500g macaron mix, 105ml warm water (50 to 55°C), food colouring (water and colouring together should total 120ml).

1. Preheat oven to 150°C fan forced.
2. Place the mix, water and colouring into a mixer bowl fitted with a paddle, and mix on low speed for 1 minute.
3. Scrape down the sides and mix on medium speed for 4 minutes, then gently hand-fold for 1 minute.
4. Pipe onto lined trays using a large round nozzle or coupler.
5. Tap the tray firmly on the bench a few times to release air, and pop any stubborn bubbles with a toothpick.
6. Stand for 20 minutes, until a skin forms and the batter no longer sticks to your finger.
7. Bake. Times may vary depending on your oven.
   • 150°C fan forced: 12 to 15 minutes
8. Allow to cool, then fill with buttercream or ganache.

Storage: Store below 25°C in a cool, dry place, away from direct sunlight.
