Vanilla Sponge Cake Mix 5kg - Iconic Cake Art

Swiss jam rolls for the market day, lamingtons for the footy club and a strawberry sponge for Nan's birthday, all from the one bag. This 5kg mix whips into a tall batter and bakes a light crumb with a gentle vanilla flavour, the same recipe as the 1kg Vanilla Sponge. Just add eggs and water.

Roll thin sheets with raspberry jam and cream, dip squares in chocolate and coconut by the tray, or layer rounds with passionfruit curd and fresh berries for a summer celebration. When the next fundraiser or birthday rolls around, the sponge is the easy part.

Ingredients: Wheat flour, Sugar, Raising agents (450, 500), Milk solids, Emulsifiers (471, 472b, 475, 477, 481), Rice starch, Glucose syrup solids, Vegetable oil (Antioxidant (307)), Salt, Vegetable gums (412, 415), Natural flavour

Directions for Use

You'll need (per 1kg of mix): 1kg cake mix, 400g eggs (approx. 8 medium eggs), 460ml water.

1. Preheat oven to 190°C for a round tin, or 220°C for a Swiss roll tin.
2. Place the cake mix, eggs and water in a mixing bowl. Whisk on low speed for 1 minute, then scrape down the sides.
3. Whisk on top speed for 6 to 8 minutes, then scrape down the sides again.
4. Whisk on second speed for a further 2 minutes.
5. Pour into a tin lined with baking paper, leaving 2 to 3cm of space at the top. For best results, cover the tin with foil.
6. Bake until fully baked. Times may vary depending on your oven.

• 8x3" round tin at 190°C (500g mix): approx. 30 minutes
• Swiss roll tin (40x30cm) at 220°C (500g mix): approx. 15 minutes

Storage: Store below 25°C in a cool, dry place, away from direct sunlight.
